Spicy Scrambled Eggs with Tomatoes


Eggs are easy to make and can be served so many ways. The easiest way to cook them is to simply scramble them up. These have been kicked up with some garlic, scallions, salsa and tomatoes.

The amount of heat can be controlled, depending on the spiciness of the salsa.

Spicy Scrambled Eggs with Tomatoes
(Serves 4.)

• 8 eggs
• 1 tablespoon water
• Salt and freshly ground black pepper, to taste
• 3 tablespoons butter or vegetable oil
• 1 tablespoon minced garlic
• 1/2 cup trimmed and sliced scallions
• 1/2 cup chopped (peeled and seeded) tomatoes
• 2 tablespoons salsa
• 1/3 cup chopped fresh Italian parsley or cilantro

Spicy Scrambled Eggs with Tomatoes
Beat eggs lightly with water and a little salt and pepper. Set aside

Put butter or oil in a skillet, preferably nonstick, and turn heat to medium.

Add garlic, scallions and a sprinkling of salt and pepper. cook, stirring occasionally, until garlic begins to soften, about 2 minutes.

Add egg mixture to the skillet and stir until curds begin to form.

Add chopped tomatoes and salsa. Continue to cook until eggs are creamy and thick but not dry.

Stir in parsley or cilantro and serve immediately with extra salsa.
